Offline means offline
In offline mode the language models, embeddings, page recognition, and search all run inside the instance. No telemetry.
Redaction before any external call
Names, organizations, and amounts are replaced locally with pseudonyms before an external model is called. If redaction cannot run, the call does not happen.
